Most countries have a version of a baba ghanoush. In Romania we call this an eggplant salad. There are many versions of the same salad throughout the country, but this is the traditional recipe. I love eating mine on bread, followed by fresh slices of tomato with a sprinkle of sea salt on top. This is considered a cold appetizer and we serve it at most occasions since this dish is loved by everyone. Maybe this dish might be considered a dip in America instead of a salad. Somehow thinking of it as a dip seems to make it more appealing. Either way I hope you give this recipe a try and give eggplants a time to shine.
