The first time I was introduced to lychee was when we moved to the United States 14 years ago. I still remember when we went to a store called Hmart with my parents. This is a big Asian grocery store where you find out everything you might need or don’t need at a good price.
That is where I had lychee for the first time and I remember vividly that the beautiful taste immediately reminded me of rose petals. What a delicious fruit this is! Later on I feel in love with lychee martinis, and that made them even more delicious. I have been searching for the right recipe to introduce them in a dessert and this is what we decided to make. This delicious lychee cake with caramel…..yep it’s amazingly tasty! The recipe comes from Chetna Makan’s cookbook “The Cardamom Trail”. I made a few changes to make it easier for anyone to make this cake and not be intimidated by it.
