This wonderful honey cake is something that my grandmother and mother used to make together during fall / winter holidays. It was a cake that I used to love very much, especially because it is made with homemade apricot jam. The apricot jam that I grew up with is more on the sour side which is absolutely amazing, and I find it very refreshing. Also, growing up in Romania, gris cu lapte (semolina pudding) was my number 1 breakfast request. This beautiful cake contains 2 layers of gris cu lapte and one layer of apricot jam. The sheets of cake are made with honey, and they are absolutely amazing.
