This is one of my many favorite dishes that my grandma used to make for me when I was growing up in Romania.
Ghiveci (pronounced “giv-etch”) is a rice and vegetable stew that is very easy to make with simple ingredients. My grandma used to make this dish in the spring since the two main ingredients grew in her garden around that time (tomatoes & bell peppers). Farm to table as they say here in America; the best way to eat food.
The word ghiveci comes from the Turkish word güveç, which was the name of the earthenware pots that were used to cook the stew. My grandma used to keep it very simple, but there are many variations of this stew- some of which include meat. I prefer grandma’s recipe. I like my ghiveci less soupy and the rice al dente, similar to a risotto.
