Cilantro Lime Rice

If you know me, you know that I have a weakness for Chipotle for two reasons: their cilantro lime rice, and their chorizo, which no longer is available and makes me very sad.

I decided to learn how to make my own cilantro lime rice to serve with anything I want in the comfort of my home. This recipe is simple, easy and most importantly, absolutely delicious! I cannot say that this is a copycat recipe of Chipotle’s, because they taste different. My version has been inspired by Chipotle, but I prefer it to theirs. This makes a wonderful side dish for any protein you might want.
