I had my first pancake at age 16. In Romania, we only had crêpes. This first magical pancake was not homemade; it was out of a box: something that I could make on my own, which made it more incredible (Kruateaz Buttermilk Pancake Mix). I ate pancakes almost every single day for lunch. Of course I had to stop eventually, but that was how I fell in love with pancakes.
Everyone loves pancakes, and there are so many versions. This is the way I like them and we will keep the recipe simple.
P.s. - The secret to fluffy and light pancakes is to not over-mix the batter (5-10 seconds is more than enough). If you over-mix, the gluten will start to strengthen and you will be left with dense pancakes, and that’s not what we want.
