Aloo Palak is a spicy potato spinach curry that is very popular all over India. There are many versions of this dish, but this is my take on it and I absolutely love it.
Curry is not something that we eat in Romania, and you either love it or hate it in my opinion. My husband’s background has some influence from South Asia, and he loves Indian food. I’ve learned how to embrace his culture and recreate dishes at home to my liking.
In Romania, we eat lots of spinach, most commonly in a dish that is similar to a spinach dip (cooked spinach in a béchamel sauce topped with a fried egg). It's a delicious recipe, but I always wanted to learn other dishes that include spinach and are not so heavy on the cream.
Aloo Palak is easy to make and is the perfect comfort food. I hope you give it a try, and that it becomes one of your favorite dishes.
